Biskut Kelapa is a nostalgic Raya cookie and is a must-have for every Eid. The recipe is so easy you do not need any mold for the iconic crescent shape. Once you eat, this cookie will literally melt in your mouth!

Biskut Kelapa Recipe 

Ingredients:

  • 2 cups of margarine
  • 1 cup of castor sugar
  • 1 tsp of vanilla essence
  • 1 egg
  • 1/2 cup of powdered milk
  • 1 1/2 cups of wheat flour
  • 1 1/2 cups of corn flour
  • 3 cups of tapioca flour
  • 1 tsp baking powder
  • 3 cups of coconut (toasted)
  • 1/2 cup of Nestum

Cooking methods:

  1. Firstly, toast 1 grated coconut until browned.
  2. Then, add 2 cups of margarine, 1 cup of castor sugar, 1 teaspoon of vanilla essence, 1 egg and mix well.
  3. After that, add 1/2 cup of powdered milk, 1 1/2 cups wheat flour, 1 1/2 cups corn flour, 3 cups tapioca flour and 1 teaspoon of baking powder.
  4. Mix the toasted coconut and 1/2 cup of Nestum until it becomes a dough.
  5. Then, shape it to be like a crescent. (Note: Can use the rim of a cup if there is no mold).
  6. Preheat the oven and bake at 180° for 25 minutes.
  7. After bake, cool the cookies first.
  8. Transfer and arrange in an airtight container.
  9. Biskut Kelapa is now ready to eat. Good luck!
