Char Kuey Teow Recipe

Ingredients:

  • 15 shrimp
  • 2 whole onion
  • 7 cloves garlic
  • 4 tbsp of chili paste
  • 1 1/2 cubes of anchovy stock
  • 10 tbsp of sweet soy sauce
  • 2 tbsp of tomato sauce
  • 2 tbsp of oyster sauce
  • 1 tbsp of shrimp paste
  • 2 tbsp of fish sauce
  • 2 tbsp of sugar
  • Salt
  • 1 pack of kuey teow
  • 1 egg
  • Bean sprouts
  • Chives

Cooking methods: Shrimp Stock

  1. Firstly, blend the onion and garlic. Set aside.
  2. Boil the shrimp for 5 to 10 minutes.
  3. Lift the boiled shrimp and keep the broth aside.
  4. Separate the boiled shrimp heads and blend with a little of the broth.
  5. Then, strain to get the shrimp essence.
  6. Mix the shrimp essence back into the broth.

Cooking methods: Char Kuey Teow Gravy

  1. Heat cooking oil in a pan and sauté the blended onions until fragrant.
  2. Add the chili paste and stir until the oil breaks.
  3. Add sweet soy sauce, oyster sauce, tomato sauce and stir evenly.
  4. Add the anchovy cubes with the fish sauce.
  5. Add 1 1/2 tablespoons of shrimp stock, sugar and a pinch of salt.
  6. Turn off the heat and wait for the gravy to cool before transfer into a container.

Cooking methods:

  1. Heat cooking oil in a pan. (Note: Use the largest flame).
  2. Add 2 boiled shrimp.
  3. Add 4 tablespoons of the gravy made earlier.
  4. Put in a handful of kuey teow.
  5. Add bean sprouts and chives.
  6. Crack an egg and stir for 3 seconds.
  7. Char Kuey Teow is ready to be served. Good luck!
