Thai Style Sweet Mango Sticky Rice Recipe
Ingredients (Mango Sticky Rice)
- 1 kg glutinous sticky rice
- 1 cup of coconut milk
- 50 ml water
- 1/2 tsp of salt
- 2 strands of pandan leave (knotted)
- mango
- 1 tbsp of sugar
- black sesame (as needed)
Ingredients (Coconut Sauce)
- 1 cup of coconut milk
- 1 cup of water
- 2 strands of pandan leave (knotted)
- 1 tsp of salt
- 1 tbsp of sugar
- 1 tsp of corn starch
Cooking methods
- Soak glutinous rice for at least 30 minutes before steaming.
- Add in pandan leaves and steam until cook for 25 minutes.
- Remove and set aside.
- Mix coconut milk, water, salt and sugar. Stir to combine.
- Pour the coconut milk mixture into steamed glutinous rice and mix all well. Set aside.
- Coconut Sauce: Boil water and add in pandan leaves.
- Pour coconut milk and stir well.
- Season with salt and sugar to taste.
- Add in corn flour and stir the sauce until thicken. Set aside.
- Served the glutinous sticky rice, coconut sauce and fresh mango slices. Garnish with black sesame.
- Sweet mango glutinous sticky rice is ready to be served.
